Apple, Oat & Ginger Pancakes With Fig Jam

Apple, Oat & Ginger Pancakes With Fig Jam

These are my apple, oat and ginger pancakes. I’ve posted this recipe before, but it wasn’t quite there. It was missing something, so I continued to experiment. This recipe does include eggs, if you don’t like using eggs in your cooking, you can supplement with flax eggs instead.

Pancakes with fig jam

These pancakes are delicious and I love topping them with homemade fig jam. The jam is super easy to make and has no added sugar, making it refined sugar free and Peta Friendly, yay! You can find the recipe for home made fig jam here. I also tried adding homemade almond milk and this is the secret ingredient that makes these apple pancakes taste so much better as well as giving them that scrumptious pancake consistency.

Almond milk is so easy to make, and I find it’s better for me personally than shop bought plant based milks. You can find my recipe for Almond Milk here.

I highly recommend having a cup of tea on hand to sip as you devour these delicious apple and ginger pancakes. I also had this friend helping me whilst I cooked.
