These are my apple, oat and ginger pancakes. I’ve posted this recipe before, but it wasn’t quite there. It was missing something, so I continued to experiment. This recipe does include eggs, if you don’t like using eggs in your cooking, you can supplement with flax eggs instead.
These pancakes are delicious and I love topping them with homemade fig jam. The jam is super easy to make and has no added sugar, making it refined sugar free and Peta Friendly, yay! I also tried adding homemade almond milk and this is the secret ingredient that makes these apple pancakes taste so much better as well as giving them that scrumptious pancake consistency.
Apple, Oat & Ginger Pancake Ingredients: Makes 4 pancakes
- 1 cups of oats
- 1 apple
- 1 Egg
- 1/2 cup of almond milk
- Fresh ginger – about a thumb size piece.
- Pop the ingredients into a blender starting with the oats so that that they form a flour like consistency, add the rest of the ingredients.
- Once you have your pancake batter cook in a frying pan with a spot of olive/coconut oil like you would a normal pancake.
- Top with fig jam and enjoy.
I highly recommend having a cup of tea on hand to sip as you devour these delicious apple and ginger pancakes. I also had this friend helping me whilst I cooked.
