Apple Protein Pancakes

Pancakes are a Sunday morning food if ever there were one aren’t they? These apple protein pancakes are delicious on their own and taste incredible with fresh fruit and a drizzle of honey. I use a plant based protein made up of pea and hemp protein powder but you could use any protein powder or flour.

Apple Protein Pancake Ingredients:

makes 6 small pancakes

  • 1 apple
  • 3 heaped tbsp of spelt flour
  • 2 scoops of protein powder
  • a splash of plant based milk – I use rice milk
  • 2 eggs  – if you don’t eat eggs you can replace them with flax eggs

Method:

Pop all of the ingredients into a blender and mix thoroughly. In a frying pan add a small amount of olive oil. Once hot enough cook two tablespoons of the mixture at a time. Top with fresh fruit and a small drizzle of honey.
