Autumnal Bean Salad | Plant Based Meals

This Autumnal Bead Salad is wonderfully filling and so easy to make. It’s full of fantastic vitamins and nutrients that are bound to add a spring to your step. A great packed lunch option for when you’re on the go. I like keeping a tupper full in my fridge to grab on the way out of the door first thing in the morning.

Autumnal Bean Salad Ingredients

  • Brown Rice
  • 1 head of broccoli
  • 1 red pepper
  • 1 tin of red beans
  • 1 tbsp of tahini
  • Salt & pepper to season

Method

Cook the brown rice in a saucepan as you usually would, drain and rinse. Chop up the broccoli and red pepper, splash a little olive oil over the top along with some salt and pepper and pop into the oven on high for 30 mins.

One cooked add the rice and vegetables into a bowl. Wash and rinse the tin of red beans, add those along with the tahini and salt and pepper.
