Broccoli Salad

Broccoli, as you may already know, is one of my favourite super foods although I can’t stand it boiled. The only way I’ll eat broccoli is roasting it in the oven. It has so much protein as well as very important vitamins. Furthermore it’s been shown to fight cancer, lower the risk of diabetes and heart disease, improve bone health, digestion and natural detoxification as well as enhancing your skin making you look younger!

I incorporate broccoli into my diet in many different ways, right now it’s all about cold salads topped with roasted broccoli, sunflower seeds and balsamic vinegar glaze. To cook the broccoli, place it on a tray and drizzle it with olive oil and sprinkle a little salt and pepper on top. I roast it in the oven on 220 degrees celcius until crispy which usually takes around 20-30 mins.
