A Colourful Winter Salad

Happy Sunday Folks! I made this scrumptious colourful winter salad for lunch and thought I’d share it on here for when I’m lacking foodspiration. It’s an easy one which you can prepare on a Sunday for a few lunches or dinners in the week, Which is perfect for me as I’m very much a grab and run kinda person!

Makes 4 Salads

Colourful Salad Ingredients:

  • 1 Sweet Potato
  • 1 Parsnip
  • 1 Onion
  • 1 Tin of chopped tomatoes
  • Olive oil
  • 4 Carrots
  • 2 Handfuls of sultanas
  • Juice of 1 lemon
  • Mixed salad leaves
  • 2 Handfuls of walnuts
  • Honey
  • Salt & Pepper

Method:

Pre-heat oven to 220’c. Peel and chop the sweet potato, parsnip and onion. Place in an oven proof tray with a splash of olive oil, chopped tinned tomatoes and salt and pepper. Pop in the oven for 30-40 mins.

Soak the sultanas in water for 20 mins. Grate the carrots, add the drained soaked sultanas and juice of one lemon in a bowl and leave to the side.

Once the oven bake is ready, place the mixed leaves on a plate. Add two spoonfuls of the oven bake and two spoonfuls of the carrot and sultana mixture. Top with a sprinklying of walnuts and a drizzle of honey.
