Today I came up with a little idea, 24 Seconds In The Kitchen; simple plant based recipes featured in just 24 second videos.
As if this wasn’t challenging enough I decided to just wing it and make the recipe up as I went along. I opted for a kitchen equipment free recipe as I know that so many people don’t own food processors or blenders. When I first began eating this way I struggled to find healthy snack recipes that didn’t require a whizzer upper.
These Cranberry Oat Bars are really delicious, they make a great breakfast bar or on the go snack and are completely sugar free. I’ll pop the recipe below as well as my very first 24 Seconds In The Kitchen.
- 2 cups of oats
- 1 cup of crushed walnuts (I crush mine using a rolling pin.)
- 1 tbsp of cinnamon
- 2 tbsp of chia seeds soaked in 8 tbsp of water
- 8 dates chopped up
- 1 cup of cranberries
- 1 cup of sultanas
- 1 tbsp of coconut oil
- 10 tbsp of water
- 8 tbsp of honey
Add all of the ingredients into a big mixing bowl, mix with your hands. Pop in a baking tray on grease proof paper and freeze for two hours.
