These Kiwi Cookies came about as I had some very sad looking kiwi’s in the fridge and wanted to make something sweet with them. I’m not very into smoothies during the colder months, and I’ve had this idea of kiwi cookies in my mind for the past week. I rummaged through the cupboards looking for ingredients and happened upon rolled oats and pollen…. and so the magnificent 3 ingredient kiwi cookies were born.
They are super easy to make, they aren’t too sweet but they’re perfect for that mid morning pick me up with a cup of tea. I popped a few into a small tupperware box this week and took them to work, and they were ideal. I like a proper snack at work to keep me going. These are both dairy free and refined sugar free as well as gluten free so they’re rather allergy friendly!
Kiwi Cookies Ingredients:
- 2 Cups of Oats.
- 6 Tbsp Of Pollen.
- 5 Kiwis – peeled and chopped.
- Pop all of the ingredients into a food mixer and mix thoroughly.
- Roll into balls and flatten.
- Place on grease proof paper on a baking tray.
- Bake in the oven on 180’c for 15-20 mins.
- Enjoy with a cup of tea.
