In yet another “let’s use up the random ingredients found in my kitchen” episode, here is my pretty scrumptious, Lentil and Vegetable Soup. This is a very warming and filling bowl and tastes great topped with roasted kale. It’s super easy to make and really rather cheap too!
Lentil & Vegetable Soup Ingredients:
- 2 Onions
- 3 Garlic cloves
- 1 Tin of chopped tomatoes
- Left over mild Doritos dip (I know…)
- 1 Carrot
- 4 Cups of lentils (soak beforehand for a couple of hours in plenty of water)
- 2 Handfuls of spinach
- Salt & Pepper
Chop all of the veg into small cubes. Fry the onion and garlic in any kind of oil until golden brown. Add the rest of the ingredients and 3 cups of water. Bring to the boil and leave to simmer for 40 mins. You will need to keep topping up with water throughout.
Leave to cool once cooked and then blitz in a blender!
