A scrumptious and very simple orange and apple sponge. This recipe does include eggs, if you’d prefer without just add two flax eggs instead. A flavoursome sponge that is perfect for that mid afternoon slump, tea, of course is a necessary requirement too.
Orange & Apple Sponge Ingredients:
- 2 Eggs
- 2 Cups of Flour – I used self raising flour
- 1 Tbsp Flax Seeds
- 1 Apple – peeled and chopped
- 2 Oranges – zest and juice
- 1/2 cup of non refined brown sugar
- 1/2 tsp of bicarb.
Pop all of the ingredients into a food processor and mix. Pour into a cake tin and bake for 30-40 mins at 220’c or until golden brown and baked through.
