I’m going to be really up front here, this plant based pasta sauce was intended to be a cauliflower soup, however once finished it was far too creamy and thick to be a soup. As I tasted it, I immediately thought oh my goodness gracious me, (yep I really do say oh my goodness gracious me, it’s the pre-school teacher in me) this soup is actually a pasta sauce!
I’ve spent so long looking for a creamy, dairy free pasta sauce that wasn’t too heavy and tasted just right. This is definitely a recipe I’ll be following next time I need a creamy white sauce. I have eaten it with pasta and roasted veggies and even tinned tuna and pasta. It’s really rather delicious, even if I do say so myself!
Plant Based Pasta Sauce Ingredients:
- A drop of olive oil
- 1 Onion
- 2 Cloves of garlic
- 1 Head of cauliflower
- Salt & Pepper
- 3 Veggie stock cubes
- 18 mace seeds
In a large saucepan place a drop of olive oil and chop the onion, fry the onion until golden brown and add the crushed garlic cloves. Once cooked chop the cauliflower up and add to the pan, add salt and pepper, the stock cubes, mace seeds and enough water to cover the cauliflower. Bring to the boil and leave to simmer for around 40 mins.
Leave to cool and then blitz in a blender.
Tadaaaa yummy pasta sauce!
