Quinoa & Olive Salad

This is a brilliant salad for when you’re on the go – I know this because I just ate it, sat in the departures lounge at the airport heading to not so sunny Cornwall. Eeek!

This delicious quinoa and olive salad is jam packed with probiotics and contains all 9 essential amino acids. It tastes great and will keep in the fridge for up to 5 days.

This recipe makes 8 portions – a great batch cooking meal!

Quinoa & Olive Salad Ingredients:

2 cups of Quinoa – cooked
1 tin of Butter beans – rinse and drain
1 tin of Sweetcorn
1.5 cups ofΒ Sauerkraut
6 tbsp of Soy sauce
2 tbsp of Olive oil
6 tbsp of Honey
Salt & pepper to season
1 small carton of Tomato purΓ©e
2 tbsp of Unrefined cane sugar

 

Method: A super easy one! Just pop all of the ingredients into a bowl and mix well. Enjoy πŸ’•
