Tomato & Coconut Soup | Plant Based Meals

Happy Monday! It’s going to be a good’en I promise.tomato coconut soup Yesterday I came up with a super easy tomato and coconut soup recipe that was scrumptious, and yummy and warming and just ohhhh. You know that perfect bowl of Autumn cosiness? I think this may well be it!

Serves 4

Tomato & Coconut Soup Ingredients:

  • 12 Tomatoes
  • Drop of olive oil
  • 1 Cup of coconut milk
  • Salt & Pepper to season

For the topping:

  • 2 Handfuls of kale
  • 3 Cloves of garlic

Method:

Pre-heat oven to 200’c.

Pop the tomatoes on a tray and drizzle olive oil over the top. Place in the oven for about 30 mins.

Once cooked pop in a blender with the coconut milk, salt and pepper. Blend and heat in a saucepan once blended.

For the topping, on a tray place the kale, chopped garlic cloves and salt and pepper. Put in the oven for 10 minutes.
