Vegan Pizza Lunch Inspiration

As you probably know, I’m all for the simple lunch options, and towards the end of the month I’m all about the simple ingredients too – as that’s pretty much all you’ll find in my kitchen cupboards! One of my favourite go to plant based lunches at the weekend is vegan pizza with potato wedges. It feels a little indulgent and I usually make enough to have it twice, either as a Saturday night quick and easy dinner or a lazy Sunday brunch. It’s simple, it’s easy, takes around 30 minute to cook and most importantly, tastes bloody marvelous!

Vegan Pizza Recipe:

To make the pizza base I mix 2 cups of brown flour with a pinch of salt, 2 tbsp of olive oil and then add water little by little until a dough consistancy has formed. I flatten it out, rather haphazardly might I add, on grease proof paper on a tray. I then add tomato pureΓ© and top with whatever vegetables I have lying around. Today was an onion, peppers and sweetcorn kinda day! I cook in the oven for 30 mins and proceed to devour a long side a steaming hot cup of tea.

For the wedges, I chop the potatoes, I’m not a fan of peeling as I always think you lose so much goodness. I drizzle olive oil over them, add a pinch of salt, some cinnamon and sweet paprika and mix it all together well in a bowl. I then pop them on a tray and in the oven alongside the pizza.
