I love a good spaghetti bolognese and I threw this one together so quickly, it’s a very simple recipe for a week night dinner that you could easily add meat to if you prefer. I actually made the vegan bolognese sauce and then popped a little in another saucepan and added minced meat for a friend.
- 1 red onion chopped
- 2 cloves of garlic
- 10 mushrooms chopped
- 1 red pepper chopped
- 1 tin of tomatoes
- salt & pepper to season
- 1 tablespoon of oregano
- 1 teaspoon of sweet paprika
- 2 tablespoons of province herbs (you may want to add less)
- Spaghetti – I used quinoa spaghetti which is very yummy
Pop the onion and garlic in a large saucepan on very low with a splash of olive oil. Allow to cook slowly for about 20 mins. Then add the rest of the ingredients and bring to the boil, turn down the heat and leave to simmer for 30 mins.
Cook the spaghetti in a seperate saucepan, timing will depend on the type of spaghetti you use.
